Spinach Beef Lasagna

Ingredients
- 1 tbsp. olive oil
- 1 clove garlic, minced
- 2 tbsp. onion, chopped
- 1 lb(450g) ground beef
- ½ tsp. garlic powder
- to taste salt and pepper
- 1 tbsp. italian seasoning
- 1/2 cup marinara sauce
- 8 oz(225g) cream cheese or dairy-free
- 1 egg
- 1/8 tsp. paper
- 10.5 oz (300g) frozen chopped spinach, thawed & drained
- 4 oz (113g) mozzarella cheese, shredded
- 2 tbsp. Parmesan cheese

- Skip the ground beef and add more spinach
Preparation
- Preheat the oven to 400F/204C, finely chop the onion and mince the garlic.
- Microwave the cream cheese for a few seconds to soften, beat the egg in a bowl.
- Season the spinach with salt and pepper, drizzle over some oil. Bake for 10-12 minutes.
Method
- Heat oil in a skillet over medium heat, add chopped onion and garlic to the skillet and cook until fragrant.
- Add ground beef, break with a spatula and cook until golden browned for 5-7 minutes then.
- Add marinara sauce, season with Italian seasoning, salt, and pepper.
- Whisk together the softened cream cheese, beaten egg, and pepper until smooth, stir in the spinach.
- In a casserole dish or baking pan, spread half of the cooked ground beef mixture into the bottom then top with spinach, mozzarella, again spread the meat mixture and spinach.
- Sprinkle with parmesan cheese, cover with a foil bake for 10-15 minutes, remove the foil and bake again for 10 minutes or until bubbling.
