Salmon with Spinach
Heat 1 tablespoon of olive oil in a large skillet on medium-high heat.

Ingredients
- 1 salmon file
- 400 gr\14oz spinach
- 1 small onion diced
- 8 olive oil
- walnuts
Preparation
- Heat 1 tablespoon of olive oil in a large skillet on medium-high heat.
- Season salmon fillet with salt.
- When the oil is hot, add the salmon fillet flesh side down. Sear for about 4 minutes on medium-high heat.
- Reduce heat to medium.
- Flip the salmon fillets to the other side. Sear for another 4 or 5 minutes on medium heat until salmon is flaky.
- Remove salmon from the skillet.
- To the same, now empty, skillet, add the spinach and the chopped onion.
- Continue cooking and stirring until the spinach wilts, for a couple of minutes. Add the walnuts. Season with salt if needed.
- Assembly. Add pan-seared salmon on top of the spinach and serve.
