Salmon Baked in Foil

Ingredients
- 2 cup tomatoes
- 2 oz. shallots
- 1 tbsp. extra virgin olive oil
- 2 tbsp. lemon juice
- 1 tsp. oregano, dried
- 1 tsp. thyme, dried
- 1\8 tsp. black pepper
- 16 oz fish salmon pink raw
Method
- Preheat oven to 400 degrees F.
- Dice tomatoes, mince shallots and place in a small bowl.
- Stir in ½ tablespoon of olive oil, lemon juice, oregano, thyme, and a dash of black pepper. Set aside.
- Brush salmon with remaining olive oil and season with pepper.
- Cut 4 sheets of aluminum foil (large enough to wrap each fillet).
- Place each fillet, oil side down, on each cut piece of foil.
- Evenly divide tomato mixture over the salmon fillets.
- Fold and seal the foil to make packets around the salmon. Place packets on baking sheet.
- Bake for 20-25 minutes, or until cooked through.
