Ingredients
- 9 oz (255g) codfish fillet
- 7 oz (200g) asparagus
- 2 tbsp. fresh thyme
- 2 tbsp. fennel top
- 2 tbsp. butter or ghee
- 1 tbsp. fresh cilantro
- 1 tbsp. lemon juice
- to taste salt and pepper

Preparation
- Wash the asparagus, snap off woody ends of asparagus and discard. Then cut asparagus in half and set aside. Mince the thyme and fennel tops and rub over the cod fillet, sprinkle with salt and pepper.
Method
- Melt the butter in a skillet over medium heat, add the fish fillets to the skillet.
- And sear on both sides until golden browned and crispy for 5-6 minutes on each side.
- Transfer the fish fillet to a platter and keep it warm.
- Fry the asparagus into the same skillet until fork-tender for about 3-5 minutes.
- Season with salt and pepper, drizzle with lemon juice, enjoy!
