Ingredients
- 1 tbsp. olive oil
- 1 medium onion, chopped
- 1 stalk celery, chopped
- 3 cloves garlic, minced
- 1 tbsp. fresh oregano, chopped
- 1 tsp. chili powder
- 2 lbs (900g) ground beef
- 1 cup shredded cheddar or dairy-free cheese
- 1/2 cup almond flour
- 1/4 cup grated Parmesan or dairy-free cheese
- 2 eggs
- 1 tbsp. low-sodium soy sauce
- to taste salt and pepper
- For vegetarian:
- steamed cauliflower rice instead of ground beef
Preparation
- Preheat the oven to 400F(206C) grease a baking sheet with cooking spray or butter.
- Finely chop the onion, celery stalk, and mince the garlic set aside.
Method
- Heat oil in a skillet over medium heat, stir in the chopped onion and celery, sauté cook until translucent.
- Stir in garlic, oregano, and chili powder and cook for a minute until fragrant.
- Once the mixture cool for a few minutes, add to the ground beef in a mixing bowl along with cheese, almond flour, parmesan, eggs, soy sauce, and season with salt and pepper. Spread the loaf mixture into the baking dish. Bake in the preheated oven for an hour or until cooked through, enjoy!
