Mackerel Steak with Asparagus

Ingredients
- 2 For the fish:
- 1 tbsp. mackerel steak skin on
- to taste olive oil
- 1 tbsp. salt and pepper
- 9 oz (255g) For the butter Asparagus:
- 1/2 tbsp. butter or olive oil
- to taste asparagus
- chopped Parsley
- For vegetarian version:
- Use fish vegetarian substitute
Preparation
- Preheat your oven to 400F(206F).
- Line a baking sheet with parchment paper, pat dry with a paper towel.
- Cut off the wooden parts of the asparagus set aside.
Method
- Place the mackerel steak on the parchment-lined baking sheet. Pour some olive oil over the fish and sprinkle with some salt and pepper to taste, roast in the preheated oven for 8-10 minutes. Crisp the fish and remove once cooked through. Reserve.
- Heat the butter in a small skillet over low, drop the asparagus to the melted butter. Stir occasionally for about 8-10 minutes until golden. Top with the chopped parsley and season with salt and pepper.
