Lamb Zucchini Skewer

Ingredients
- 2 tbsp. avocado oil plus more for the grill
- 1 lb(450g) lean lamb
- 2 medium zucchini
- 1 cup cherry tomatoes
- ½ tsp. garlic powder
- 1 tsp. ground cumin
- 1 tsp. dried oregano
- to taste cilantro and lettuce for garnish
- salt and pepper
Preparation
- Preheat the grill over medium-high, cut the lamb meat in 4-5cm chunks.
- Chop off each of the zucchini ends then slice into thin pieces.
- In a bowl, whisk together the oil, garlic powder, ground cumin, oregano, salt, and pepper set aside. Place the wooden skewer in a bowl, pour in enough water to cover and let it soak for 15-20 minutes.
Method
- In the oil and spices mixture, add the cubed lamb pieces, combine to coat evenly and refrigerate for 2-4 hours or overnight to marinate.
- Remove from the refrigerator, thread the meat, zucchini, and tomatoes in the skewers, brush with some oil.
- Place the skewer in the preheated grill and grill over medium heat until golden brown for 5-7 minutes per side. Garnish with cilantro and lettuce, enjoy!
