Grilled Mackerel with Sweet Chilli Sauce

Ingredients
- 21 oz (600) For the fish:
- 1 mackerel fillets
- 2 tbsp. zest of lime
- 1 tbsp. lime juice
- 1/2 cup olive oil plus more for the grill
- 1/4 cup Keto sweet chilli sauce:
- 3 water
- 2 tbsp. unseasoned rice vinegar
- 1/4 tsp. cloves garlic, minced
- 1/3 cup soy sauce, or coconut aminos
- 1/4 tsp. xanthan gum
- 2 tbsp. brown sugar substitute
- 2 tsp. ground ginger
- 1 lb 450g garlic chilli sauce
- pure sesame oil
- For vegetarian:
- paneer, sliced
Preparation
- Pat dry the mackerel fillets with a paper towel, score a couple of time on the skins, zest the lime and squeeze out the lime juice set aside.
Method
- Place the fish fillets in a dish, rub with lime zest, lime juice, and olive oil then let it marinate for 5-8 minutes. Sprinkle the fillets with salt then add to the preheated greased grill and cook on both sides for 3-4 minutes or until opaque and cooked through.
- Stir together all the sauce ingredients in a pot and bring it to a boil, reduce the heat and simmer until thickened for bout 10-15 minutes.
- Place the fish in a serving platter, drizzle with the sweet chilli sauce, enjoy!
