Ingredients
- 1 tbsp. coconut oil
- 1 lb(450g) chicken breast, cut into strips
- 1 spring onion, sliced
- to taste salt and pepper
- 2 garlic cloves, minced
- 1 large bell pepper
- 1 cup green beans
- 1 tbsp. butter or olive oil
- 1 tbsp. soy sauce
- 1 tsp. lemon juice
- 1 lb(450g) For vegetarian:

Preparation
- Using a paper towel, pat dry the chicken and slice it into thin strips, chop the spring onion, mince the garlic.
- Wash, deseed, and thinly slice the bell peppers set aside.
Method
- In a skillet, heat the coconut oil then add the sliced chicken, onion, salt and pepper, and stir fry for 3-5 minutes.
- Mix in the garlic and cook for a minute, transfer to a platter, keep it warm.
- In the same pan, add the butter and sliced bell pepper and green bean, and stir fry until fork-tender for about 3-4 minutes.
- Add the cooked chicken back to the skillet, pour in the soy sauce and lemon juice and cook until warm through, enjoy!
