Cajun-Spiced Grilled Tofu

Ingredients
- 12-oz. package extra-firm tofu, cut in thin rectangular shapes
- 1 ½ tbsps. honey
- 2 tbsps. soy sauce
- ½ tsp. salt
- 1 tbsp. cajun spice powder
- 1 ½ tbsps. olive oil, plus more oil for grilling
- ½ tsp. garlic powder (optional)
- baked beet, cut in slices and parsley for serving (optional)
Method
- Drain the tofu and pat dry it with a paper towel.
- Carefully cut the tofu into thin rectangular shapes
- Combine 1 ½ tbsps. of olive oil, honey, soy sauce, garlic powder, Cajun spice powder and salt in a medium bowl.
- Coat the tofu with the marinade and let it sit for at least 15 minutes.
- Place a grill pan over medium-high heat. Grease the pan with 1 to 1 ½ tbsps. of olive oil over the grill pan. Place the tofu on top of the pan. Cook until grill marks can be seen, for about 2 to 3 minutes. Turn the sides of the tofu with a spatula.
- Serve with baked beet and parsley, if desired. Enjoy!
