Beet & Berry Salad

Ingredients
- 2 medium beets
- ½ tbsp. oil
- 2 tbsp. olive oil
- 1 cup sliced strawberries
- 1 cup raspberries
- ½ cup blackberries
- 2 tbsp. lemon juice
- apple cider vinegar
Method
- Preheat the oven to 400F degrees .
- Place beets in a baking dish and add 1 in. of water.
- Cover and bake at 400F until tender.
- Whisk together olive oil, vinegar, lemon juice, salt and pepper.
- Combine all the berries and beets in a large bowl and top with the dressing.
