Beef Fajitas Bowl

Ingredients
- 2 tbsp. olive oil, divided
- 1 large garlic clove, minced
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 24 oz(700g) flank steak
- 3 large bell peppers
- 1 large onion thinly sliced
- 1 juice of lime
- to taste salt
- For vegetarian:
- Skip the beef and make vegetable fajitas
Preparation
- In a mixing bowl, combine lime juice, chili, minced garlic, 1 tbsp oil, cumin and salt.
- Add the beefsteak to the marinate bowl and combine to mix and coat well.
- Let the steak marinate for an hour at room temperature. Deseed and thinly slice the bell peppers, peel and slice up the onion.
Method
- Heat the remaining 1 tbsp of olive oil in the skillet, add the marinated steak to the skillet and cook per side for 2-3 minutes for medium-rare, place in a platter and let it rest for 5 minutes before slicing.
- Add the sliced vegetables to the skillet, add more oil if needed and sear for 4-6 minutes until tender.
- Slice up the steak into thin strips, enjoy with veggies, cheese, and salad.
