Beans with Almond Dukkah

Ingredients
- 100g Turkish bread, torn into 2cm pieces
- 500g green round beans, trimmed
- 2 tsps. finely grated orange rind
- 2 tsps. extra virgin olive oil
- 60g (1/3 cup) ALMOND DUKKAH:
- 2 tbsps. blanched almonds
- 2 tsps. sesame seeds
- 2 tsps. ground coriander
- ground cumin
Method
- Preheat oven to 200ºC. Place the bread on a baking tray. Bake for 10 minutes or until light golden. Set aside to cool slightly. Break into small pieces.
- Meanwhile, to make the almond dukkah, stir the almonds in a large frying pan over medium heat for 2-3 minutes or until lightly toasted. Transfer to a bowl. Cook sesame seeds in the pan, stirring, for 2 minutes or until lightly toasted. Add coriander and cumin. Cook, stirring, for 30 seconds or until aromatic. Transfer to a bowl. Finely chop the almonds. Stir into sesame mixture. Season with salt and pepper.
- Cook the beans in a saucepan of salted boiling water for 2-3 minutes or until bright green and tender crisp. Drain.
- Place bread, orange rind and 2 tablespoons of the dukkah in a bowl. Season with salt and pepper. Drizzle over the oil. Toss to combine.
- Place the beans on a serving platter. Sprinkle with the bread mixture.
