Ingredients
- 3/4 cup/ 90g Cupcakes:
- 6 tbsp. coconut flour
- 1 tsp. whey protein powder
- 1/8 tsp. baking powder
- 3/4 cup/ 170g salt to taste
- 3/4 cup/ 145g softened butter
- 3 allulose sweetener
- 1 tbsp. large eggs
- 1/4 cup/ 59 ml vanilla extract
- 1/2 cup/ 133g half and half
- 1 1/3 cups/ 260g Frosting:
- a pinch granulated allulose sweetener
- salt
- Heavy Cream
Method
- Preheat the oven to 325 degrees F then line a cupcake or muffin pan with a parchment paper, set aside. Using a medium mixing bowl, sift in the coconut flour, whey protein powder, baking powder, salt to taste, mix to combine then set aside. Place the sweetener and butter in the bowl of a stand mixer then beat to combine.
- Add in the eggs, one after another then mix to combine. Add in half of the flour mixture then mix to combine. Add in the half and half alongside the vanilla then mix to combine. Add in the rest of the flour mixture then mix again to combine. Pour the mixture into the lined cupcake pan and bake in an oven for about twenty to twenty-two minutes at a temperature of 325 degrees F until baked through, set aside to cool.
- Using a food processor or a high-speed blender, add in the granulated sweetener and blend until it becomes a powder, set aside. Pour about 1 1/3 cup of powdered sweetener into the bowl of a stand mixer alongside the butter then beat to combine. Add in the rest of the sweetener then mix until the mixture becomes fluffy. Add in the vanilla extract then beat to combine. Add in the heavy cream, in bits then mix to combine. Frost the cupcakes as desired then serve.
