- 3 Cake:
- 1 cup (4 oz.)/ 110g eggs
- 1 tbsp. almond flour
- 2 tbsp. coconut flour
- 1 tsp. heavy whipping cream
- 1/2 tsp. baking powder
- 1/2 cup (32⁄3 oz.)/ 110g cream of tartar
- 1/2 cup/ 120 ml erythritol
- 1/2 cup/ 120 ml Sauce:
- 1 tbsp. unsweetened almond milk
- a pinch powdered erythritol
- 1/4 tsp. vanilla extract
- 1/2 cup/ 120 ml salt to taste
- 1 tsp. xanthan gum
- 2 tsp. Cream:
- cream cheese
Method
- Using a medium mixing bowl, add in all the ingredients for the cake then mix properly to combine. Grease a baking dish with butter, pour in the cake mixture, use a spatula to smoothen the top then microwave for about three minutes thirty seconds until cooked through. You can microwave for another twenty seconds if the cake is still runny at the center, set aside to cool.
- Mix all the sauce ingredients in a bowl until fully combined (make sure the sweetener is dissolved), set aside. Once the cake is cool enough, poke small holes on its surface then pour over the sauce. Place the cake in the refrigerator for about two hours to overnight to absorb the sauce.
- Place the ingredients for the whipped cream in a mixing bowl then mix with an electric mixer until there is a formation of stiff peaks. Frost the cake with the whipped cream, dust with cinnamon, slice, and serve.
