Ingredients
- 2 1/4 cups/ 252g Scones:
- 1/4 cup/ 30g almond flour.
- 2 tbsp. coconut flour.
- 1 tsp. erythritol.
- 1/4 tsp. baking powder.
- 1 pink salt to taste.
- 3 tbsp. large egg.
- 2 tbsp. melted coconut oil.
- 1 tsp. heavy whipping cream.
- 5-7 drops vanilla extract.
- 1 cup liquid stevia.
- 1/4 cup/ 50g chopped strawberries.
- 3 tbsp. Glaze:
- powdered erythritol.
Method
- Preheat the oven to 350 degrees F then grease a baking sheet with cooking spray, set aside. Using a large mixing bowl, add in all the dry ingredients for the scone then mix properly to combine. Place the wet ingredients for the scone into a large mixing bowl and mix to combine. Pour the dry ingredients into the bowl with the wet ingredients then mix everything to combine.
- Knead the dough on a floured working surface, roll out the dough into a round shape then cut into smaller triangles. Place the scones into the greased baking sheet and bake in the preheated oven for about twenty to twenty-five minutes until they become golden at the edges and baked through.
- For the glaze, place the sweetener and cream in a mixing bowl then mix properly to combine. Once the scones cool, glaze as desired then serve.
