Spinach Rolls with Puff Pastry

Ingredients
- 3 tbsp. For the pastry:
- 1 cup coconut flour
- 2 tbsp. mozzarella cheese or dairy-free cheese
- 1 For the Stuffing:
- 10 oz (300g) vegetable oil
- 1 pinch clove garlic, minced
- 3.5 oz(100g) frozen chopped spinach, thawed and drained
- 1 salt to taste
- 1 tbsp. crumbled feta cheese or dairy-free cheese
- 10 oz (300g) egg, beaten
- almond milk
- For meat version:
- ground chicken instead of spinach
Preparation
- Grate the mozzarella cheese and thinly chopped the rosemary set aside.
- Preheat the oven to 400F(200C) and grease two baking sheets with parchment paper.
- In a bowl beat the egg with 1 tbsp of almond milk.
Method
- Put the mozzarella cheese and coconut flour in a pan over medium heat, stirring constantly until form into a dough.
- Transfer the dough onto a parchment paper and roll it out and cut it into square or round pieces.
- In a skillet, add oil and garlic over medium heat and cook until just fragrant, add the spinach cook until warm through for about 3-5 minutes, place in a bowl and add the feta cheese.
- Place a slice of puff pastry on a lightly floured surface, top with 2-3 tbsp of the spinach mixture.
- Roll one side of the pastry over the other side and brush with the egg mixture.
- Brush the rolls with the beaten egg and place onto the prepared baking sheets.
- Bake the rolls in the preheated oven until golden brown for about 20-25 minutes, enjoy!
- Meat version: In a skillet, add oil and garlic and cook until just fragrant, add the ground chicken and cook until cooked through for about 3-5 minutes, place in a bowl and add the feta cheese. Continue with the method have mentioned above.
