Spicy Edamame Dip
Roast the garlic in a medium skillet placed over medium heat for about 15 minutes, or until light brown. Remove from the heat, cool and peel the skin off. Set aside.

Ingredients
- 4 large cloves garlic, un-peeled
- 16 oz. shelled edamame beans
- 1/4 cup fresh cilantro, finely chopped
- 1/4 tsp. ground cumin
- 1/2 tsp. Cayenne pepper
- pinch salt and pepper
- 1/4 cup fresh lime juice
- 4 tbsp. olive oil
- Pita chips, for dipping
Method
- Roast the garlic in a medium skillet placed over medium heat for about 15 minutes, or until light brown. Remove from the heat, cool and peel the skin off. Set aside.
- In a saucepan, add 8 cups of water and bring it to boil. Add the beans and cook for about 5 minutes. Bring about 8 cups of water to a boil in a saucepan and drop in the beans. Reserve 3/4 cup of water before draining. Drain and let the beans cool.
- Add the roasted garlic in food processor and process until coarsely chopped. Add the beans, cumin, Cayenne pepper, salt and pepper. Process again.
- Mix in the lime juice, olive oil and cilantro and process well to combine.
- Pour the reserved water gradually while processing until smooth. Serve with pita chips and enjoy!
