  1. Roast the garlic in a medium skillet placed over medium heat for about 15 minutes, or until light brown. Remove from the heat, cool and peel the skin off. Set aside.
  2. In a saucepan, add 8 cups of water and bring it to boil. Add the beans and cook for about 5 minutes. Bring about 8 cups of water to a boil in a saucepan and drop in the beans. Reserve 3/4 cup of water before draining. Drain and let the beans cool.
  3. Add the roasted garlic in food processor and process until coarsely chopped. Add the beans, cumin, Cayenne pepper, salt and pepper. Process again.
  4. Mix in the lime juice, olive oil and cilantro and process well to combine.
  5. Pour the reserved water gradually while processing until smooth. Serve with pita chips and enjoy!
