Semolina Cookies
Mix the oil and sugar in a bowl until well combined.

Ingredients
- ¼ cup semolina
- ¼ cup all-purpose flour
- 2 ½ tbsp. oil
- 2 tbsp. sugar
- 1 tsp. baking powder
- 2 almonds
- 1 tsp. sesame seeds
- 1 egg yolk
Method
- Mix the oil and sugar in a bowl until well combined.
- The dry ingredients including semolina, all-purpose flour and baking powder are added to the oil-sugar mixture. Mix the ingredients well until the dough becomes crumbly.
- Wrap the dough in a baking sheet or cling film and put it in the freezer for 5-10 mins.
- After 5-10 mins, take the wrapped dough out of the freezer and shape the dough into two small round cookies of approx. two and half inches each.
- In the meanwhile, preheat the oven up to 180 °C (356 °F) for 10 minutes.
- Take a container and mix oil and egg yolk in it. Using a brush, apply this mixture on the cookies and then sprinkle some sesame seeds and press the cookie gently at the centre with a finger to place almonds.
- Grease the baking tray with a little oil using a brush and then place these round cookies on the baking tray leaving enough space between. They will only spread a little.
- Bake the cookies up to 15-20 minutes.
- Take out the tray from the oven and let the cookies to cool completely until they are converted from soft (when hot) to crunchy cookies.
