Ingredients
- 40ml (2 tablespoons) vegetable oil, plus extra to fry
- 1 small onion, finely chopped
- 2 garlic cloves, chopped
- 1 small red chilli, seeded, finely chopped
- 350g potatoes, peeled, diced, boiled
- 50g frozen peas, thawed
- 2 tsps. mild curry powder
- 2 tbsps. chopped fresh coriander
- 8 large slices white bread, crusts removed

Method
- Heat the vegetable oil in a large frying pan over medium heat. Add the onion, garlic and chilli and cook for 2 minutes. Add the potato, peas and curry powder and cook for a further 1-2 minutes, mashing together to combine. Remove from the heat, season with salt and pepper and stir in the coriander.
- Use a rolling pin to flatten each slice of bread. Divide the filling evenly and place in the centre of each piece of bread. Brush the edges with a little water then fold over corner to corner, pressing the edges to form a seal.
- Heat the oil in a deep frying pan over high heat. Add the samosas and fry until golden on both sides. Serve with mango chutney, raita and a salad.
