Pumpkin Spice Gourd Muffin

Ingredients
- 2 cups Dough:
- 2 tbsp. – 30ml chopped milk mozzarella cheese
- 3/4 cup butter
- 1/4 cup superfine almond flour
- 2 tbsp. – 30ml coconut flour
- 3 tbsp. – 45ml yeast
- 1 granulated erythritol sweetener
- 1/8 – 0.6ml tsp. cinnamon ground
- 1/4 – 1.2ml tsp. nutmeg
- 1/4 cup Allspice
- 2 pumpkin puree
- 2 tsp – 10ml large eggs
- pinch Collector:
- 2 tbsp. – 30ml cinnamon
- 2 tbsp. – 30ml salt
- chopped pecans (optional)
Preparation
- Preheat the oven to 350 ° F / 180 ° C.
Method
- Flour: Combine the almond flour, coconut flour, yeast, sweetener, cinnamon, and nutmeg in a medium-sized bowl and mix well.
- In a large bowl mix cheese and butter. Stir well and microwave.
- Mix for two minutes.
- Add the melted dry ingredients with the cheese, eggs and pumpkin puree to make the dough.
- Stir well. Let dough sit for five minutes.
- Meanwhile butter muffin tin.
- To Assemble: Mix in a small bowl sweetener, cinnamon, and salt and thoroughly blend.
- Pinch a small piece of dough and roll it into 3/4-inch diameter ball.
- Roll the ball inside the sweetener mixture and place it in the muffin cup containing ghee.
- Repeat with two more balls for a whole of three balls per muffin cup.
- Fill all ten cups with three coated dough balls.
- Add butter to the remaining sweetener and cinnamon mixture and microwave for 30 seconds.
- Stir and spoon a spoonful of the butter mixture over each muffin.
- Top with chopped pecans if in use.
- Bake within the center of the oven for 30-35 minutes, or until golden brown.
- Remove slightly before serving hot.
