Ingredients
- 2 cups White Sugar
- 1 1/2 cups water
- 3/4 cup fresh orange juice
- 1 tbsp. Angostura bitters
- 6 large fresh peaches
Method
- Place sugar, water, orange juice and bitters into a saucepan over low heat. Cook, stirring, for 3 minutes, or until sugar has dissolved. Increase heat to high. Bring to the boil. Reduce heat to medium.
- Cut a small cross in the base of each peach. Add peaches to saucepan. Cover. Simmer gently for 10 minutes, or until peaches are just tender. Remove saucepan from heat. Using a slotted spoon, remove peaches from syrup. Plunge into a bowl of iced water. Drain. Peel and discard skin from peaches.
- Return syrup to stove on high heat. Boil for 6 to 8 minutes, or until syrup has reduced by one-third. Set aside to cool.
- Place peaches into serving bowls. Drizzle with syrup and serve
