  1. Wash and dry apples thoroughly. Insert sticks into stem ends of apples. Line a tray with baking paper. Spread pecans out on work surface.
  2. Combine sugar, water and vinegar in a small, heavy-based saucepan. Stir constantly, over low heat, without boiling, until sugar has completely dissolved. Increase heat and bring to the boil. Simmer, without stirring, until liquid turns to a golden toffee colour. Remove from heat.
  3. Dip an apple in toffee and turn to coat evenly. Working quickly, roll sides of apple in pecans and stand upright on prepared tray to set. Repeat with remaining apples, toffee and nuts.
  4. When cool, wrap in clear cellophane and tie with string. Store in a cool, dry place, away from direct sunlight, but not in the fridge. They are best made and eaten on the same day.
