Ingredients
- 5 very ripe bananas, peeled
- ½ cup smooth salted peanut butter
- ½ tsp. vanilla extract
- 1 cup canned full-fat coconut milk
Method
- Place all ingredients into a blender and blend until very smooth, for about 1 minute. Pour into the bowl of your ice cream maker and process according to manufacturer’s instructions. Or, alternatively, freeze all ingredients in a bowl for 3 hours, and then immediately process in a food processor until smooth. Store in airtight container in freezer for up to 1 month.
