Ingredients
- 6 egg whites
- 1 tsp. cream of tartar
- 2.82 oz./80g powdered erythritol
- 1/4 tsp. xanthan gum
- 2 tsp. vanilla extract
- 1 tsp. vinegar
- 1 TO SERVE:
- 7.05 oz./200g batch of lemon curd

Method
- Preheat the oven to 302 degrees F then place a baking paper on a baking tray, set aside. Using a medium mixing bowl, add in the egg whites and cream of tartar then whisk properly with an electric mixer until there is a formation of stiff peaks. Add in the sweetener, in bits then mix to combine. Add in the xanthan, vanilla, and vinegar then mix properly to combine.
- Decrease the temperature of the oven to 212 degrees F. Spoon the meringue unto the lined baking tray then shape to your desired pattern. Place the baking tray into the preheated oven and bake the pavlova for about one hour thirty minutes. Turn off the oven and let the pavlova sit in the oven for about three hours. Top with the lemon curd, cream, and berries, slice, and serve.
