Ingredients
- 5 medium eggs
- 2 cups/ 224g almond flour
- 1/4 cup/ 30g coconut flour
- 1 1/2 tsp. baking soda
- 1/4 cup/ 59.5g heavy whipping cream
- 3/4 cup/ 150g erythritol
- 4 tbsp. melted butter
- 2 tsp. vanilla extract
- 1/4 cup/ 33g unsweetened chocolate chips
- 2 tbsp. unsweetened cocoa powder
Method
- Preheat the oven to 350 degrees F, place a parchment paper on a loaf pan then set aside while you make the rest of the ingredients. Using a large mixing bowl, add in the almond flour, coconut flour, sweetener, and baking soda then mix properly to combine. In another mixing bowl, add in the eggs and whisk together with the heavy cream, melted butter, and vanilla extract.
- Next, pour the flour mixture into the cream mixture then mix properly to combine. Pour 1/3 of the mixture into a medium mixing bowl, add in the cocoa powder and second heavy cream then mix properly to combine until the mixture becomes smooth. Pour 3 tablespoons of the mixed vanilla cake batter at the bottom of the lined loaf pan then top with a little chocolate cake batter.
- Keep alternating this process until there are no cake batters left, swirl the top with a spatula then bale the cake for about forty to fifty minutes until it is baked through and an inserted toothpick comes out clean. Slice, and serve.
