Low Carb Popsicles

Ingredients
- 1 cup Dairy Pure Sour Cream
- 1 cup light whipping cream
- 1/2 cup powdered sweetener
- 1/2 tsp. – 2.5ml vanilla
- 1 cup chopped fresh strawberries
- 2 tbsp. – 30ml chocolate
Method
- In a large bowl, whisk together the sour cream. Whisk, 3/4 cup light whipping cream, sweetener, and vanilla until well combined.
- In a blender or kitchen appliance, puree the strawberries until smooth. Add 1/2 cup of the sour cream mixture and mix until well combined.
- Transfer 1/2 cup of the sour cream mixture to another bowl and pour with chocolate until smooth. It will be quite thick, so mix extra light whipping cream 1 tbsp at a time until it is thin and has a "spoon" consistency.
- Transfer the chocolate mixture to a frosting piping bag or an outer Zip lock bag and cut the very tip. Use the bag to pipe a fine layer into the popsicle mold, each about 1/3 full. As you try to create the layer, you will not get any drips while under the edges (as they are going to show the equivalent of your other layers).
- If necessary, use a Q-tip to wash the edges of the mold.
- Apply the leftover vanilla mixture over the chocolate, filling about 2/3 of the mark on each Popsicle mold (you can also pour it in a bag, or simply pour it from a measuring cup). Touch up the edges.
- Pour strawberries over the vanilla mixture, filling the highest (again, with a piping bag or by measurement) of almost every mold. Add 2/3 of the wooden sticks to each popsicle and allow the them to set for about 4 to five hours.
