Healthy Granola Bars

Ingredients
- 1 cup packed dates, pitted
- 1/4 cup peanut butter
- 1 cup roasted unsalted almonds
- 1/4 cup Maple syrup
- 1 1/2 cups rolled oats
- Dried fruit, chocolate chips, banana chips, nuts, vanilla, etc. (optional)
Method
- Preheat the oven to 350 degree F.
- Add the dates in a food processor until processed into small bits for at least 1 minute.
- Toast the oats in preheated oven until slightly golden brown, for about 10-15 minutes.
- In a large mixing bowl, combine almonds, oats and dates and set aside.
- Add maple syrup and peanut butter in a small saucepan placed over low heat and heat until warm. Stir and pour it over the oat mixture. Mix and break up the dates until they are dispersed throughout.
- Once done, transfer the mixture to an 8×8-inch baking dish or other small pan lined with plastic wrap. Press the mixture firmly into the dish flatten it uniformly with a spatula.
- Using a plastric wrap, cover it and place in the refrigerator for about 15-20 minutes.
- Remove the bars from the pan and chop them into 10 even bars. Store in an airtight container.
