Ingredients
- 4 tbsp. monk fruit sweetener
- 2 tbsp. almond butter
- 1 tbsp. coconut oil
- 1 large egg
- 1 tsp. cinnamon powder
- 3/4 tsp. sea salt
- ¼ cup sunflower seeds
- ¾ cup pecans, chopped
- 1 cup almonds, chopped
- 1 cup unsweetened coconut flakes
Preparation
- Preheat the oven to 350F(176C) and prepare a baking sheet by lining it with parchment paper sling set aside.
- Crack the egg in a bowl and beat it lightly with the help of a fork set aside.
Method
- Add the monk fruit sweetener, almond butter, and coconut oil in a saucepan over medium heat, stirring constantly.
- Once the monk fruit has dissolved, remove the saucepan from the heat and let allow to cool for 3-5 minutes.
- Whisk in the beaten egg, cinnamon, and salt until well combined.
- Stir in the sunflower seeds, chopped pecans, almonds, and coconut flakes until well combined.
- Spread the mixture onto the prepared baking sheet and press it down with a flat bottomed glass or spatula.
- Bake in the preheated oven until the top just set for 15-18 minutes, allow to cool completely at room temperature in the baking sheet.
- Once cooled at room temperature, cut into pieces with the help of a sharp knife, it can be store in ab airtight container in the refrigerator for up to 3 months.
