Ingredients
- 1 small onion roughly chopped
- 2 cloves garlic
- ½ cup cilantro
- ½ cup fresh parsley
- 9 oz (255g) cauliflower
- ½ cup almond flour
- 1 large egg
- 1 tbsp. cumin ground
- to taste salt and pepper
- ½ tsp. turmeric ground
- ½ tsp chili powder
Preparation
- Cut the cauliflower into florets and roughly chop parsley and cilantro.
- Preheat the oven to 400F(200C) and line a baking sheet with parchment paper.
Method
- Add the cauliflower to a food processor and process until chunky rice forms.
- Remove from the food processor, add the garlic, cilantro, and parsley into the food processor and blend until finely chopped.
- Mix in the cauliflower back along with almond flour, egg, and spices and process until well combined.
- Shape the mixture into bite sizes balls and place the falafel balls onto the prepared baking sheet.
- Bake in the preheated oven until lightly golden for about 35-40 minutes, enjoy with a dipping sauce of your choice.
