Ingredients
- 6 oz./ 170g softened butter
- 1/3 cup/ 80 ml almond butter
- 3 eggs
- 3/4 cup (5½ oz.)/160g erythritol
- 1/3 cup (1 oz.)/30g cocoa powder
- 1 cup (4 oz.)/ 110g almond flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt to taste
- 2 tbsp. water
- 1 tbsp. vanilla extract
- 1/2 tsp. instant coffee powder which is optional
- 1 oz./28g chopped dark chocolate
Method
- Preheat the oven to 350 degrees F, place a parchment paper on a baking dish then set aside while you prepare the rest of the ingredients. Place the butter, almond butter, eggs, and sweetener in a mixing bowl then mix with a stand mixer until well incorporated. Add in the cocoa powder, flour, baking powder, salt to taste, water, vanilla extract, and coffee then mix properly to combine.
- Place the chocolate bar into the bowl and mix in. Pour the brownie batter into the lined baking sheet, use a spatula to smoothen the top then bake in the preheated oven for about twenty-five to twenty-eight minutes until it sets.
- Once baked, let the brownie cool for a few minutes, slice, and serve.
