Ingredients
- 2 cups (8 oz.)/ 130g Crust:
- 1/2 cup (32⁄3 oz.)/ 110g almond flour
- 1/4 tsp. erythritol
- 4 oz. salt to taste
- 4 butter, melted
- ½ cup (32⁄3 oz.) Lemon filling:
- 2 oz./ 110g large eggs
- pinch lemons, 1 juiced and 1 zested
- 3/4 cup (3 oz.)/ 85g vanilla extract
- Topping:
- powdered erythritol which is optional
Method
- Preheat the oven to 350 degrees F, place parchment paper on a baking pan then set aside. Using a small mixing bowl, add in the flour, erythritol, and salt to taste then mix properly to combine. Add in the melted butter and mix again to combine. Place the mixture into the lined baking pan then press unto the bottom. Place the baking pan into the preheated oven and bake the crust for about fifteen minutes until the edges become golden in color, set aside.
- Using a mixing bowl, add in the egg and sweetener then beat to combine. Add in the butter, lemon juice, lemon zest, vanilla, flour, and salt to taste then mix properly to combine until the mixture becomes smooth. Pour the filling on the prepared crust then bake for about fifteen to twenty minutes until it sets.
- Once baked, let it cool for a few minutes, slice into small bars then serve.
