Ingredients
- 2 cups/ 220g almond flour
- 1 tbsp. baking powder
- 1/4 tsp. salt to taste
- 3/4 cup granulated sweetener
- 1 cup/ 240 ml greek yogurt
- 4 large eggs
- 1/2 stick/ 2oz/ 56g butter
- 2 tsp. lemon zest
- 1/2 tsp. vanilla extract
- 1 cup/ 170g fresh Blueberries
Method
- Preheat the oven to 350 degrees F, place a parchment paper on a loaf pan then set aside. Using a medium mixing bowl, add in the almond flour, baking powder, and salt to taste then mix properly to combine, set aside. In another mixing bowl, add in the sweetener, yogurt, eggs, softened butter, lemon zest, and vanilla extract then mix properly to combine.
- Pour the flour mixture into the bowl with the egg mixture then mix everything to combine. fold in the blueberries, pour the cake batter into the lined loaf pan then bake the cake for about one hour until baked through and an inserted toothpick comes out clean.
- Once baked, let the cake cool for a few minutes, slice, and serve.
