Custard Tarts

Ingredients
- 3 tbsp. For the tart:
- 1 cup coconut flour
- 1 ¼ cups mozzarella cheese or dairy-free cheese
- 2 tsp. For the custard:
- 3 unsweetened almond milk
- 5 tbsp. vanilla extract
- pinch eggs
- sweetener
- nutmeg
Preparation
- Grate the mozzarella cheese and thinly chopped the rosemary set aside.
- Grease 8 tart pan with olive oil or cooking spray.
- Preheat the oven to 400F(204C).
- Tart: Put the mozzarella cheese and coconut flour in a pan over medium heat, stirring constantly until form into a dough.
- Transfer the dough onto a parchment paper and roll it out and cut it into square or round pieces.
- Place the sliced dough into the tart pan and bake the tart in the preheated oven for about 8-10 minutes or until lightly browned.
- Custard: Put the almond milk and vanilla in a saucepan over medium heat until just simmering.
- In a bowl, put the eggs along with the sweetener and beat until fluffy then slowly pour the hot milk while stirring the eggs constantly.
- Divide the custard mixture evenly between all the tart pans and sprinkle with nutmeg, bake for 30-35 minutes, enjoy warm or cover and store in the refrigerator for up to 3 days.
