Ingredients
- 1 1/2 cups/ 350 ml Ice Cream:
- 1 cup/ 240 ml heavy whipping cream
- 5 unsweetened almond milk
- ½ cup (3¾ oz.)/ 110g large eggs yolks
- 2 tsp. xylitol
- 1/2 tsp. vanilla extract
- 2 1/2 oz. (2⁄3 cup)/ 70g salt to taste
- 2 tbsp. COOKIE DOUGH:
- 2 tbsp. almond flour
- 1 tbsp. softened butter
- chopped baking chocolate
Method
- Place a saucepan over medium-low heat, add in the cream and almond milk then heat. Make sure you stir as you cook. Add in the egg yolks and keep whipping until the mixture becomes frothy. Once the mixture reached a temperature of 140 degrees F and thickens, add in the sweetener then whisk until it dissolves completely.
- Add in the vanilla and salt to taste, stir to combine the take the pan out of the heat. Let the mixture cool for a few minutes then chill in the fridge. Place all the dough ingredients in a mixing bowl and mix properly to combine. Use clean hands to crumble the dough into small pieces then set aside.
- Pour the ice cream into your ice cream maker and freeze according to the directions of the manufacturer. Towards the end of the freezing, slowly add in the cookie dough, freeze till the end then serve.
