  1. Preheat the oven to 400 degrees F then grease a baking pan (round pan) with cooking spray, set aside. Properly mix the almond flour, coconut flour, erythritol, flaxseed, baking powder, xanthan gum, and salt in a large mixing bowl until the mixture combines. Add in other ingredients like the eggs, cream, melted butter, vinegar, vanilla, and water then mix again to combine until a sticky dough forms. Let the dough rest for about five minutes, set aside.
  2. In another mixing bowl, add in all the ingredients for the cinnamon filling then mix properly to combine. Use clean and oily hands to make a ball out of the dough then roll out between two parchment papers. Spread the mixed filling on the dough leaving out a few inches at the margin.
  3. Roll the dough into a log then use a sharp knife to the dough log into nine pieces. Place the rolled dough into the baking pan and bake in the preheated oven for about five minutes. Decrease the temperature of the oven to 350 degrees F and bake the cinnamon roll for about fifteen to twenty minutes until they are baked through and becomes golden brown in color.
  4. In the meantime, combine the cream cheese, butter, and erythritol for the frosting in a medium mixing bowl then use a hand mixer to beat until the mixture becomes fluffy. Add in the vanilla and stevia then mix to combine. Add in the cream, in bits then mix until the mixture becomes thick. Glaze the cinnamon rolls with the frosting and serve.
