Ingredients
- 2 cup/ 245g almond flour
- 1/4 cup/ 31g coconut flour
- 1/3 cup + 2 tbsp./ 93g erythritol
- 2 tsp. baking powder
- 1/4 tsp. salt to taste
- 3 large eggs
- 2 tsp. vanilla extract
- 1/2 cup/ 120ml melted unsalted butter
- 1/3 cup/ 80ml unsweetened almond milk
- 1 cup/ 120g CINNAMON STREUSEL TOPPING:
- 1/2 tsp. ground cinnamon
- 2 tsp. ground nutmeg
- 1/2 cup/ 120g instant espresso
- 1 cup / 130g chopped walnuts which is optional
- 2 tbsp. GLAZING:
- powdered sweetener
Method
- Preheat the oven to 350 degrees F, place a parchment paper on a square cake pan then set aside. Using a medium mixing bowl, add in all the ingredients for the streusel then mix properly to combine until the mixture becomes a crumble, set aside.
- Using another mixing bowl add in the almond flour, coconut flour, baking powder, erythritol, and salt to taste then mix properly to combine. In another mixing bowl, add in the eggs, almond milk, vanilla, and melted butter then mix properly to combine. Pour the egg mixture into the flour mixture then mix properly to combine. Feel free to use an electric mixer for this.
- Place half of the mixed batter into the pan, add in some sprinkles of the streusel, top with the rest of the batter and finally add in the rest of the streusel. Place the cake pan into the preheated oven and bake the cake for about thirty to forty minutes until it becomes golden in color and an inserted toothpick comes out clean. Once baked, let the cake cool for a few minutes while you make the glazing.
- For the glazing, mix the sweetener and milk in a bowl until it becomes thick as desired. Drizzle the glazing over the cake then serve.
