Chocolaty Quinoa Cookies

Ingredients
- 85g (½ cup) coconut sugar
- 1/3 cup walnuts or pecans, roughly chopped
- 150g (1 cup) white spelt flour
- 1 tsp. baking powder
- ½ tsp. ground cinnamon
- 95g (1 cup) quinoa flakes
- 100g unsalted butter, softened
- 1 tsp. pure vanilla extract
- 1 egg
- 150g good quality dark chocolate, chopped
Method
- Preheat the oven to 356 degrees F. prepare 2 baking trays with a non-stick baking paper.
- Mix together the coconut sugar and butter until creamy. Add vanilla and eggs, beat well until combined.
- In another bowl, sift baking powder, cinnamon and flour and add it to the butter mixture. Beat well on a low speed until blended.
- Add nuts, chocolate and quinoa flakes. Stir well to combine.
- Place spoonful of mixture on to the prepared baking tray at least 4 cm apart. Flatten the balls using a fork coated with flour.
- Place one tray in the preheated oven and bake until golden, for about 12 minutes.
- Once done, remove the tray and let it cool. Repeat the same with the second tray. Once cool, set aside on a wire rack.
