Chocolate Coconut Fuse Bars
You can either use 1/4 cup liquid sweetener, or you can use stevia. Add 1/4 cup of extra copra oil to make bars of equal sweetness and liquid spacing.

Ingredients
- 3 cups chopped uncut coconut (240 g)
- 1/4 cup sweetener
- 1/2 cup melted copra oil or coconut butter (96 grams)
- 1/2 tsp. – 2.5ml pure vanilla
- 1 /4 tsp. – 1.25ml salt
- 1-1/2 cups chocolate chips or sugar-free chocolate chips
- 1/3 cup almond butter, or extra chips or coconut oil/butter

- You can either use 1/4 cup liquid sweetener, or you can use stevia. Add 1/4 cup of extra copra oil to make bars of equal sweetness and liquid spacing.
- Line an 8x8 pan with the parchment edges up. Combine the first 5 ingredients - I like to mix with kitchen tools, but this is often done by hand. (If discarding the kitchen appliance, you will raise the copra oil to 2/3 cup to make sure they are not uprooted.
- Spread the mixture into the pan till about 2/3 of it is filled. Carefully melt the chocolate, dissolve in almond butter and pour over coconut. Sprinkle the remaining coconut on top and refrigerate for 1 hour or until firm. On quiet days or for indoor parties, these bars are fine for getting away. Store leftovers in the fridge or freezer.
