  1. You can either use 1/4 cup liquid sweetener, or you can use stevia. Add 1/4 cup of extra copra oil to make bars of equal sweetness and liquid spacing.
  2. Line an 8x8 pan with the parchment edges up. Combine the first 5 ingredients - I like to mix with kitchen tools, but this is often done by hand. (If discarding the kitchen appliance, you will raise the copra oil to 2/3 cup to make sure they are not uprooted.
  3. Spread the mixture into the pan till about 2/3 of it is filled. Carefully melt the chocolate, dissolve in almond butter and pour over coconut. Sprinkle the remaining coconut on top and refrigerate for 1 hour or until firm. On quiet days or for indoor parties, these bars are fine for getting away. Store leftovers in the fridge or freezer.
