Ingredients
- 1 cup (4 oz.)/ 240 ml (110 g) Chocolate cake:
- ¾ cup (5½ oz.)/ 180 ml (160 g). almond flour
- ½ cup (1½ oz.)/ 120 ml (45 g) granulated erythritol
- 1 1/2 tbsp. unsweetened cocoa powder
- 1 tbsp. ground psyllium husk powder
- 1/4 tsp. baking powder
- 4 salt to taste
- 8 oz./230g eggs
- 4 oz./110g cream сheese
- 8 oz./230g salted butter, melted
- 8 oz./230g Peanut buttercream frosting:
- 1/2 cup/120ml salted butter
- 1/4 cup/55g cream cheese
- 2 tsp. unsalted and peanut butter
- 10 powdered erythritol
- 1/2 cup/120 ml vanilla extract
- 1 tbsp. Decorations:
- cherries (optional)
- heavy whipping cream
- chopped salted peanuts
Method
- Preheat the oven to 350 degrees F then place a baking rack in the middle of the oven, set aside. Using a medium mixing bowl, add in the almond flour, sweetener, sifted cocoa powder, psyllium husk powder, baking powder, and salt to taste then mix properly to combine, set aside. In another mixing bowl, add in the cream cheese and melted butter then whisk with an electric mixer until combined.
- Add in the eggs, one after another, and keep whisking for a few minutes until the mixture becomes smooth. Add in the flour mixture then whisk properly to combine. Butter two cake pans, pour the cake batter into the pans then bake in the preheated oven for about twenty-five to thirty minutes until baked through and an inserted toothpick comes out clean.
- Once baked, let the cake cool for about ten minutes then chill in the refrigerator for a few hours. For the frosting, beat the butter, cream cheese, and peanut butter with an electric mixer until fully combined. Add in the sweetener and vanilla extract then beat to incorporate. Frost the cake in layers, top with the cherries, whipped cream, and peanuts, slice, and serve.
