- 4 apples, peeled and finely chopped
- 6 tbsp coconut sugar
- 1 cup water (250 ml)
- 1 cinnamon stick
- 1 lemon juice
Method
- Place the apples, sugar, water, cinnamon stick, and lemon juice in a saucepan. Cook over high heat until the mixture starts to boil, then cook the applesauce over medium heat for 40 minutes or until you get a perfect consistency.
- Remove the cinnamon stick.
- You can blend the applesauce or use a masher or a fork, but this step is optional.
- Serve it with some bread and eat it as a healthy snack, or use it as an egg substitute in baking. A regular egg would be 1/4 cup of applesauce (1 tbsp). It works great with recipes like vegan brownies or vegan pancakes.
- Keep the leftovers in an airtight container in the fridge for 5-7 days or in the freezer for up to 3 months. To thaw, transfer it to the fridge 1 or 2 days before eating it.
