Chicken Soup
Put the chicken, carrots, celery and onion in a large soup pot and cover with cold water. Heat and simmer, uncovered, until the chicken is soft and boiled.

Ingredients
- 1 (3 pound) whole chicken
- 4 cups low-sodium chicken broth
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 medium onion, chopped
- 1 bay leaf
- 2 tbsp. chopped Parsley
Method
- Put the chicken, carrots, celery and onion in a large soup pot and cover with cold water. Heat and simmer, uncovered, until the chicken is soft and boiled.
- Take everything out. set aside to cool. Add the carrots, celery, onion and bay leaf to the broth, bring back to a simmer and cook until the vegetables are about half cooked (they will still have resistance when tested with a knife but be somewhat pliable when bent), about 10 minutes.
- Return the chicken and everything to the pot, stir and serve.
